OH THE PLACES! Check out the Tagliatelle con Amatriciana from Houdini Pizza Laboratory (HPL) in Fanwood. The Roman classic features San Marzano tomatoes, onion, pancetta and extra virgin olive. The dish is topped with sublime Grana Padano shavings.
Amatriciana is one of the best known pasta sauces in Italian cuisine.
HPL is a small and authentic Italian cucina located at 25 South Avenue. HPL is the sister restaurant to Houdini Kitchen Laboratory in Ridgewood, Queens. Both locations have amassed a loyal following so be prepared to wait (btw-worth it!) on busy weekends.
In addition to their regular menu, HPL usually offers two or three pasta dishes.
